Verb dictionary/ない + うちに = before (something happens)
- 忘れないうちに (before I forget)
Verb ている + うちに = while doing (gradual change)
- 話しているうちに (while talking, gradually...)
Adj/Noun の + うちに = while in that state
- 若いうちに (while young)
